Tofu Broccoli scramble

Ingredients
1 tbsp olive oil3-4 cloves garlic1.5 cups fresh broccoli, chopped1 tbsp soy sauce14 oz. (drained) package of extra firm tofu1/4 cup salsa
Directions
Heat olive oil over medium heat in a large frying pan (or sauce pan). Add garlic and saute for about a minute. Stir in broccoli and soy sauce, cover, and steam for 5 minutes.

Meanwhile, crumble the tofu, breaking it up into small pieces. Once the broccoli is done steaming, add the tofu and the salsa to the pan and heat through (5-10 minutes). Enjoy!

Makes about 4 1-cup servings.

    Medium heat caused me to burn the garlic and broccoli. I had to start over and try on low. When it was done, the flavor was rather bland, so I ended up adding garlic powder, cumin, cayenne, and a red pepper blend. - 5/31/09
