Chicken Taco Salad

Ingredients
3 oz Tyson Fajita Chicken Breast Stips1 Jalapeno Pepper1 oz Baked Tostitos Tortilla Scoops1 Roma Tomato1/4 cup Fat Free Chedder Cheese2 Tbs Fat Free Sour Cream2 Tbs Wholly GuacamolePlate full of mixed salad greens
Directions
Add 1 diced jalapeno pepper to a hot skillet (the rib and seeds may be omitted to reduce spiciness)
Add the chicken to the jalapeno to warm the chicken (the chicken is already fully cooked)
On a large bowl or plate, add salad greens and diced or sliced roma tomato. Add chicken/jalapeno mixture. Now add guacamole and sour cream. Sprinkle cheese on top.
I sometimes crush the tortilla chips on top or use them to scoop up the salad. Whenever I need more fat or calories for my day, I add an additional serving of guacamole or substitute reduced fat sour cream or cheese.
This recipe is also great with a fresh squeezed lime juice or cilantro for a little more flavor!
