Roast Chicken with Gravy

Ingredients
1 5-6 LBS chicken1 onion, quatered1/2 cup of water2 Tbsp cornstarch
Directions
Rinse the chicken and pat dry. Place in a glass baking dish along with onion quarters. Cover with tin foil and bake at 350 for 1 1/2 hours. Remove the foil for the last 20 minutes of cooking and baste chicken with it's own juices. Remove the chicken to a plate and pour the juice and onion into a small sauce pan. Bring to a boil. In a cup mix water and cornstarch. When the juice is boiling add the cornstarch mixture and stir continueously until the gravy has reached a hard boil again.
