1 Box Original No Pudge Brownie Mix1 egg white5 oz fat free Greek Yogurt (plain)1 tsp coconut extract1 tbsp powdered sugar
makes 12 cupcakes
Preheat oven to 350 degrees
Prepare 12 regular sized muffin tins by using paper liners
Combine brownie mix, egg white, greek yogurt and coconut extract. Batter will be thick.
Divide into 12 muffins and bake for 20-25 minutes. Check for doneness using a toothpick that should come out clean.
Remove from oven, let cool and dust with powdered sugar.
Remove paper liner and decorate a small plate or top with cool whip lite.
