Pasta with Broccoli and Cauliflower

2 boneless skinless chicken breasts1/2 box (8 oz) whole wheat pasta2 cups tomato sauce1/2 bag (8 oz) frozen broccoli/cauliflower mix1/4 cup onion, chopped1 clove garlic, choppedItalian Seasoning2 oz part-skim mozzarella cheese, shredded
Bake chicken breasts, season as desired (about 30 minutes in a 400 degree oven).
Meanwhile, cook pasta as directed. Prepare frozen broccoli and cauliflower in microwave according to package directions. Drain water from both dishes, in the same colander.
While pasta and vegetables cook, spray pan with nonstick spray and saute onion for 3-4 minutes on medium heat. Add garlic and cook for 1-2 minutes. Add sauce to pan and heat through.
Remove chicken from oven and cut into bite-sized pieces. Add chicken, pasta, and vegetables to sauce mixture. Stir and heat through. Season with Italian Seasoning to taste.
Makes 5, 1.5 cup servings
