4 large potatoes, cut into wedges1/2 medium onion, sliced2 small carrots, sliced1/3 cup peas7 stalks asparagus1/2 tsp. minced fresh garlic (1 clove)3 Tbsp. light Smart Balance1/2 tsp. salt1/4 tsp. pepper
Layer everything into casserole dish and bake covered at 400 degrees for 40 minutes. Stir. Bake 10 min. longer, then remove cover and broil (stirring occasionally), until desired brownness.
Add a can of red beans and adjust calories, if desired.
Makes 4 servings of 1 1/2 cups each or 8 of 3/4 cups each as a side dish (176 cal.).
