No Salt Southwest Chipotle Chicken Thighs

1 Pkg. Bonelss, skinless chicken thigh filets2 Tbsp.. extra virgin olive oil1 green bell pepper, sliced or chopped1 onion, sliced or chopped1 cup of mushrooms, sliced or chopped2 cloves of garlic, minced2 oz. white wineMrs. Dash Southwest Chipotle seasoningShredded cheddar cheese (Optional)
In a non-stick skillet heat olive oil over medium-high heat and add onions and peppers.
Cut thigh filets into bite-sized pieces and add to peppers and onions. Season with Mrs. Dash Southwest Chipotle to your taste. ( I sprinkle it around the pan a couple of times for a mild flavor.)
Once chicken begins to brown add mushrooms and garlic. When chicken is cooked through add white wine and let simmer a few more minutes.
Sprinkle with shredded cheddar cheese if desired.
Serve over rice or with flour tortillas.
