2 large pears, cored and sliced or cubed1.5 oz. raisins1/4 cup chopped walnuts1/2 tsp. vanilla extract1/2 tsp. almond extract1/2 tsp cinnamon1/4 tsp ginger1/2 tsp cardamom (optional)1/8 cup corn starch (about 2 tbsp.)2 Tbsp brown sugar1/2 cup old fashioned oatmeal2 Tbsp Smart Balance light margerine
makes 4 1-cup servings
Preheat oven to 350 deg. F
Mix together pears, walnuts, vanilla and almond extracts, cinnamon, ginger and cardomom. Spoon into a lightly spray-oiled loaf pan. Sprinkle brown sugar and corn starch evenly over the top.
Work together the oatmeal and margarine with a fork or fingers, and drop evenly over the top.
Bake 35-30 minutes or until top is brown.
