House Fried Rice

2 c. leftover cooked rice3 tbsp. sesame oil2 tbsp. shallots, finely chopped2 cloves garlic, finely chopped1 c. cooked bay shrimp1/2 c. small diced canadian bacon1 c. small diced cooked chicken breast2 celery stalks, diced2 medium carrots, diced1 green bell pepper, diced1/2 c. frozen peas, thawed1 egg, beaten1/4 c. soy sauce2 tbsp. honey
1. Heat a wok or large skillet over medium-high heat. Pour in sesame oil and stir in onion. Fry until golden, then add garlic. When garlic is lightly browned, mix in shrimp, bacon, and chicken. Fry until cooked through.
2. Lower heat to medium and stir in celery, carrot, green pepper, and peas. Fry until vegetables are crisp-tender. Stir in beaten egg and cook just until egg is scrambled and firm.
3. Mix in COLD rice, mix thoroughly with vegetables and stir in soy sauce and honey. Heat through and adjust seasoning to your preference and serve immediately. Serves 6 main dish portions.
