10 tbs flour (half white, half whole grain)8 tbs brown sugar6 tbs regular milk4 tbs oil 2 eggs1 tsp baking powder5 red apples (or green apples, apricots, peaches, pears...)
Preheat oven at 410 F (210 C). Butter and line a big rectangular baking pan (18-12 inch) or two medium baking pans (12-9 inch).
Sift the flours and baking powder.
Mix the brown sugar, oil, milk and eggs. Add the flour and mix well. Pour into the pan.
Peel and cut in thin slices the apples (or any other fruit). Arrange slices in rows, each one slightly on top of the next (you can use more or less fruit depending on how close you arrange the slices).
Bake in the oven for 30 minutes. Let it cool before serving.
Makes 16, 4.5 by 3 inch pieces, 127 calories each.
