Spiced chickpeas and bulgar wheat

Ingredients
6oz bulgar wheat400g chickpeas200g peas2tsp oillarge onionabout 1/3 large red pepper3 tsp moroccan spicesfresh coriander
Directions
1) Put bulgar wheat, chickpeas and peas in just under 2 pints of boiling water. Let it simmer for 10-15 minutes. The water should be sucked up when the bulgar wheat is tender.

2) Fry the onion and pepper in the oil, adding the morrocan spices. Be generous with the seasoning - chickpeas tend to soak up a lot of flavour!

3) Put the cashews under the grill until they are golden brown. Watch like a hawk - this happens very fast! Alternatively dry fry them in a pan.

4) Mix bulgar and chickpea mixture with the onion, peppers and cashews.

5) Serve garnished with a liberal amount of chopped fresh coriander.
