Pulp of 1 avocado1/2 cup coconut milk3 cups vanilla soy milk1/2 cup sugar1/3 cup black tapioca pearls6 Ice cubes
Cook tapioca pearls in boiling water for 3-4 minutes. Drain, then cover with cold water so they don't stick together. Drain once again just before using.
Whip the remaining ingredients in the blender until smooth. Spoon the tapioca pearls into glasses, then pour the shake over the pearls. Enjoy.

I love avocado bubble tea & after moving to the UP of course I am unable to find it anywhere! This recipe is SO EASY & tastes just like the real thing! If you're afraid of it because you're thinking "avocado smoothie doesn't sound so delectable" just give it a try, you will love it!!! - 10/9/13
