Pork Tenderloin Pot Roast (Crockpot)

2.34 pound pork tenderloin5 medium russet potatoes, cut into 8ths1 medium onion, cut into 8ths1 bell pepper cut into chunks1 lb. baby carrots (larger ones, not thin)2 cloves garlicMorton's Lite Salt, to taste (about 1/8 tsp)Black Pepper (about 1/8 tsp)1/8 cup cornstarch
In stove top safe crockpot, sear pork tenderloin until golden brown on all sides sprinkling with Lite Salt and Pepper to taste, Add all vegetables under tenderloin and place in crock pot base. Cook on low 7 hours.
Remove Roast and Vegetables, Mix cornstarch with a little cold water until smooth and add to liquid in crockpot. Turn on High for a few minutes to make gravy. Cut up roast and add roast and vegetables back into gravy.
