Chicken with Cheesy Mushroom Gravy

Ingredients
4 chicken boneless, skinless chicken breasts1 cup sliced fresh mushrooms1 can cream of mushroom soup1 cup shredded Cheddar cheese1/2 packet Good Seasonings Italian dressing mix
Directions
Place the chicken in a glass baking dish.
Mix together the remaining ingredients and pour over chicken. Cover and bake at 350 for one hour, or until the chicken is fully cooked.

Makes 8 servings. Each serving is 1/2 chicken breast and 1/8 of the gravy.

    I brown the chicken a little bit first and use brown or basmati rice in place of the potatoes. For the veg, I serve broccoli and/or cauliflower - the sauce is great on them as well. My family luvs this meal each and every time - a real favourite!!! I don't use the Italian seasoning though. - 2/22/09

    You could probably use any brand of Italian dressing mix that you find in your area, I just use good seasonings because it's what grandma always used for this recipie. If you need to know how much to use of the brand you choose- the good seasonings packet is 19g and I use half, so 9.5g of seasoning.

    It is a dry spice mix in a packet used to make salad dressings. Here's the Kraft web page so you can see what it is. http://brands.kraftfoods.com/goodseasons
    I find it in the same isle as bottled salad dressing at my store.

    I made this last night and it was simple to make and tasted great. The mushroom gravy that it made was awesome - I served it over mashed potatoes, but would be awesome over brown rice too. The only variation I did to the recipe was add 2 cups of mushrooms instead of one. - 3/6/09

    It wasn't bad, but it lacked taste. I think the next time I'll add garlic or something to give it more of a taste. I added potatoes to the dish and they came out great but the chicken (althought soft) left me wanting more. - 3/2/09

    You could also try using the whole packet of italian mix instead of half, I have a friend who makes it that way for more kick, but I find it's too much for my taste. Hope that helps :)

    This was OK for my family. It was super quick to put together which is a bonus, but the flavor was just average. The "gravy" turned out really thin and just didn't have a whole lot of flavor except salt. I might try adding onions and garlic if I make it again. - 3/9/09
