Black Bean and Pumpkin Soup

Ingredients
1 small onion, chopped3 cloves garlic, crushed4 cups chicken broth1 can pumpkin1 Tablespoon chili powder1/2 Tablespoon Cumin3/4 cup salsa1 can corn and pepper mix, drained1 can black beans, rinsed and drained
Directions
Chop onion. Spray a pot with nonstick spray. Saute onions and garlic until tender. Add seasonings and cook for 1 minute longer. Add chicken broth and bring up to a simmer. Stir in pumpkin and mix well. Add the rest of the ingredients and bring to a boil. Reduce heat and simmer for 20 minutes.

Makes 4 HUGE servings.
