I omitted the red pepper and opted for canned rinsed corn and canned rinsed black beans. It was yummy. Leftovers great too. - 8/23/13

This was a good, quick weeknight dinner. I added a little sour cream, shredded cheddar cheese, avocado and a corn tortilla. Delicious! My son couldn't get enough. Plus, there are more than enough leftovers to take for lunches during the week. - 5/21/13

We served this with some low fat sour cream and everyone loved it! As another poster said, it would be good stuffed in red or yellow peppers. Definitely a do-over at our house! - 8/31/11

This was pretty good. I didn't have very much salsa or fresh tomatoes, but I had some tomato sauce and tomato paste that needed to get used and I added some corn and I used my "homemade" taco seasoning. My "picky" eaters ate two helpings. This is a keeper. - 3/31/11

This was quite yummy! I used a full packet of taco seasoning and I only had half "regular" salsa so I used some peach salsa I had! Not bad! I served it with shredded 2% cheddar and lo fat sour cream. Will surely make this again!
Thanks for the easy recipe! - 5/3/10

Very good. I did not use any salt and used homemade salsa so I could control the salt and sugar there. - 2/25/10

Very good and very easy! You can play around with flavor based on the salsa you use and I added spicy black beans and cut back on the beef. - 1/13/10

This was very good, but could've been more spicy. I used a whole package of taco seasoning made as directed on package. Next time I'm going to try it with cayenne pepper. - 8/29/09

My kids gobbled this up, and my son went back for more. They ate theirs in reduced-fat tortillas with some sour cream and cheddar cheese. It was very filling! And yummy. I used a whole package of taco seasoning. - 4/23/09

This sounds like it would make a fabulous stuffing for red, orange, yellow bell peppers-maybe a little red.fat shredded cheddar on top! - 4/2/09
