Eggplant Salad

Ingredients
Eggplant, fresh, 1 eggplant, unpeeled Peppers, sweet, red, fresh, 1 medium Salt, 1 tsp Red Ripe Tomatoes, 1 medium Parsley, 2 tbsp Olive Oil, 1 tbspLemon juice, 1 tbsp
Directions
You can either barbecue/grill or bake the eggplant and the bell pepper. Then peel and dice them finely.

Add olive oil and lemon juice in eggplant and bell pepper mixture.

Peel tomato and dice.

Chop parsley.

Mix all ingredients and season with salt.
