Shrimp & Broccoli Quiche

Ingredients
1 cup non fat cottage cheese2 cups egg substitute1/2 cup cooked/chopped broccoli12 large shrimp (I previously marinated in the Chipotle Lime, not necessary, I just needed to calculate)1/2 cup part skim Mozzarella cheese1T Ricotta Cheese1T Shredded Parmesan Cheese1T Shredded Asiago CheeseCooking Spray
Directions
Preheat oven to 375.

Spray muffin tins with cooking spray.

Mix all ingredients together. Pour into muffin tins. Should make 16. Bake approx. 45 minutes or until center is just set.
