Ingredients
Directions
1 lb. lean ground beef1 large Onion, chopped 1 medium head Cabbage, chopped5 med. Potatos, cubed1 tbsp. Olive Oil1 can Beef brothsalt, pepper
In a large stockpot saute onion in olive oil. Add beef and cook on medium heat until gray. Season with salt and pepper. Add cabbage and potatos. Stir everything up. Add broth and 1-2 cups of water.
Bring to a boil, cover and simmer for 30-40 minutes until cabbage is tender and potatos fall apart. Stir occationally while cooking, add more water if needed to prevent scorching, but you want most of the water cooked away when done.
Now use an imersion blender to coarsely chop the whole dish. Adjust seasonings if needed.
This is a quick, stew like dish served traditionally with a side of canned fruit, like peaches or plums. When we where children, we liked to drizzle some of the sweet fruit juice over our serving.
