Chunky Apple Cake with Cinnamon Sauce

2 1/2 C. Whole Wheat Pastry Flour1 1/2 tsp. baking soda1 1/2 tsp cream of tartar2 tsp cinnamon1/4 tsp cloves1/4 tsp nutmeg1 1/2 cups honey2 tsp vanilla1/3 c unsweetened applesauce2 2.5 oz containers prune baby food puree1/3 c frozen apple juice concentrate (thawed)2 egg whites , unbeaten2 1/2 cups peeled and chopped baking apples1/2 cup dark raisins (opt)2 egg whites, lightly beaten.Cinnamon Sauce1 Tbl whole wheat pastry flour3/4 cup evaporated skimmed milk2 Tbl honey2 Tbl frozen apple juice concentrate1/2 tsp cinnamon1/2 tsp vanilla
Preheat oven to 325. In large bowl, combine all dry ingredients and set aside.
In medium bowl, mix honey, vanilla, applesause, prune puree, juice concentrate and two unbeaten eggs. Fold in chopped appes and raisins. Stir into flour mixture until just blended. Gently stir in 2 lightly beaten eggs. Do not overmix or the cake gets too dense.
Spoon batter into two 9x1 1/2inch nonstick baking rounds.
Bake at 325 for 40 -45 minutes, or until toothpick inserted in center comes out clean. Cool for 10 minutes, then remove from pans.
Sauce:
In small saucepan over medium heat, whisk together all ingredients except vanilla. Bring mixturue to low boil, reduce heat and cook appx 5 minutes or until thickened. Stir in vanilla, let cool slightly and ladle over assembled cake. Serves 16.
