Falafel Fritters

1 cup beans (I used black, but you can use any kind)1 15 oz can garbanzo beans1/4 cup Parsley, freshly chopped1/2 cup Cilantro, freshly chopped1 red chili pepper, remove seeds1/4 cup red onion, chopped1 Tbsp. lime juice, fresh1 tsp. cumin1 clove garlic3 Tbsp. brown rice flour (or substitute other)
In food processor, process cilantro and parsley until fine. Add the next nine ingredients. Pulse until the mixture forms a very thick, smooth paste (you will need to scrape the sides down and process a few times.) Add the flour and pulse to combine. Place this mixture in the refrigerator for an hour to chill. This can be made a day ahead of time.
Drop falafel mixture 1 Tbs. at a time onto a non stick cookie sheet. Bake at 350 degrees for 10-12 minutes. You can brush lightly with olive oil and bake until golden brown as well.
Serving Suggestions:
Serve alone with hummus.
Or you can serve warm on a piece of lettuce with onions, tomatoes, tahini sauce and sesame seeds to garnish. Wrap lettuce around the fritter and enjoy!
