Apple Cake

Ingredients
1 eggs1 cup Splenda (granulated)1 cup flour (all purpose)4 medium apples, diced or use less if desired(I used Fuji apples)4 tbsp. butter or margarine1/4 cup chopped walnuts1/2 tsp baking powder1/2 tsp baking soda1/2 tsp nutmeg1/2 tsp salt1 tsp cinnamon
Directions
Preheat oven to 350 degrees

Mix together the sugar and butter until well blended. Core, peel and dice the apples. Beat the egg, mix in vanilla and walnuts then add to the apples. Mix Splenda/butter with the apple mix. Sift remaining ingredients and mix into the batter*.
Grease an 8" square pan and pour batter into it.
Cook for 45 minutes, let cool thoroughly before cutting into squares.

*batter will look like it has disappeared with all of the apples mixed in, fear not, it's just hiding and the end result is pretty nifty!

I cut into 12ths, stats are based on 1 square.

    I have a recipe for German apple cake that is similar to this. This recipe is healthier than my version so I will be trying this. there is nothing better on a cold day than a warm piece of apple cake with a hot cup of tea. - 2/14/09

    I loved this cake! I served it for friends after the 'Thanksgiving In a Dish". It was so easy, I used my toaster oven ( if anyone was wondering if it would work). It came out beautifully by following the directions. I did make one change, I used brown sugar instead of Splenda to avoid chemicals. - 10/3/09

    i made this yesterday and i was surprised how it came out nice and crsipy! Was worried about not being baked inside but i guees it seemed soggy because of the apples! I guess i didn't dice them small enough! And yes the vanilla is mentioned in preparation but not in ingredinets, i put it anyhow! - 2/21/09

    I made this cake yesterday and it turned out great. The taste was excellent and the recipe was easy to follow. I used 2 teaspoons of vanilla because I'm a big fan of vanilla and it was perfect. Granted there wasn't a lot of batter but it was still good. Will make again with double the batter. - 11/9/09

    wow, I've missed coffee cake and this is superb! I did use a mixture of spelt flour and almond flour for the white flour, but I dont think it made any difference in taste or texture. Thanks! - 5/3/09
