Barbeque fish with kale and sweet potatos

100g salmon1 tbsp olive oil2 tbsp barbeque sauce1 small sweet potatoe2 tsp honey1 clove garlic, crushed2 handfuls chopped kale
Serves one
Taken from Zest Magazine-can replace fish with Tofu for a vegetarian version.
1) Cook the salmon until done in halfthe olive oil
2) Take half the BBQ sauce and toss the fish in it
3) Pierce the potatoe a few times and Microwave for 8-10 mins
4) Cut potato in half and top with honey
5) Add remaining half oil to the pan, and saute the crushed garlic, kale and remaining BBQ sauce for about 5 mins
6) Serve with the fish and sweet potato
