1 cup long grain brown rice1 tbsp olive oil8 oz chicken breast, cut into bite-size pieces8 oz (2.5 links) Sam's Club Spinach & Asiago Cheese Chicken Sausage4 oz shrimp 1tsp garlic salt1 medium onion, chopped1 medium green bell pepper, chopper3 celery stalks, chopped2 cups low-sodium beef broth (or chicken)2 tbls. Jim Beam hot sauce1.5 cups (3 roma) tomatoes
1. In heavy sauce pan w/lid heat oil over medium heat. Add chicken, sausage, shrimp, celery, green pepper, onion, garlic salt and 1 tbsp of hot sauce.
2. Continue heat until chicken is mostly cooked, approximately 5 minutes. Add rice, beef broth, tomatoes and thyme.
3. Bring to a boil, cover, reduce heat and cook approximately 40-45 minutes until rice is tender.
4. Let stand 5 minutes before serving.
