Crock Pot Chicken Chili

Ingredients

3-4 chicken breasts (or 8-10 tenderloins)1 can of black beans1 can of diced tomatoes2 oz of elbow macaroni2 tsp lime juicecumin, cayenne pepper, black pepper, chili powder, and cilantro to taste
Put thawed chicken breasts in the crockpot and season as desired. Then add lime juice, beans, tomatoes, and cilantro.
Cook approximately 2-4 hours on low (or 1-2.5 hours on high), then pull out the chicken and shred it. Put chicken back into the crock pot. Then boil water for the pasta, cook about 8-10 minutes, then add to the crock pot.
As all slow cookers vary in cooking time, make sure to periodically check the chili. Mine usually takes about 3 hours on high, then I cook another hour or hour and a half on low.
When finished, enjoy with tortilla chips, sprinkle with low fat cheese, or place mixture in a whole wheat tortilla - whatever you like!
Makes about 6 one cup servings.
