1/4 lb rice noodles3 tbsp olive oil1/2 tbsp minced garlic1/4 cup sliced onion1/4 lb shiitake mushrooms1/2 cup chang, thinly sliced1 carrot, matchsticked1/4 cup chopped scallions1/4 tsp anise seed1/4 tsp cumin1/2 cup water1 tbsp soy sauce1 tbsp toasted sesame oil1 cup snow peas1 cup fresh basillemon pepper or black pepper to tastelemon wedges and scallions for garnish
Cook rice noodles according to package. Strain, add 1 tbsp of the olive oil, toss to coat, and set aside.
In a wok or large saucepan over high heat, saute galric and onion in remaining 2 tbsp oil until translucent. Stir in mushrooms and seitan. Add chang, carrot, scallions, cayenne, anise seeds, cumin, water and soy sauce and cook until done, about 10 minutes. Add noodles and sesame oil; cook 10 minutes. Stir in snow peas and fresh basil. Arrange on serving platter and garnish with lemon pepper, lemon wedges, and scallions.
