2 eggplants1 zucchini3 tbsp olive oil1/2 tsp garlic powder1/2 tsp oregano1/2 tsp basil
Grill: Slice zucchini and eggplant into thin slices. Coat with olive oil and spices. Will cook in 10-15 min.
Oven: Cut eggplant and zucchini into 1/4 inch cubes, coat with olive oil and spices and bake at 375 for 45-60 minutes, until vegetables are soft and brown.
