Vegan Split Pea and vegetable soup

1 cup diced celery1 cup diced carrot1.5 cup diced onion1.5 cup chopped potato.25 cup chopped red bell pepper2 cups chopped fresh spinach3/4 cup yellow split peas4 cups vegetable broth1 cup coconut milk (not sweetened)1 tbsp. olive oil1/8 tsp. ground cloves1 tsp. ground ginger1 tsp. salt
Either saute or oven roast celery, carrot, onion, potato, and red pepper mixed with olive oil. When softened, add yellow split peas and 4 cups vegetable broth. Bring to boil and simmer for 20 minutes. Add chopped spinach, coconut milk, cloves, ginger, and salt. Simmer 15 to 20 minutes, or until thick. The potatoes and split peas will break down to create the creaminess of the soup.
