Balsamic Roasted Potatoes

Ingredients
2 pounds new potatoes, quartered1 T minced garlic1 tsp chopped fresh thyme1 tsp chopped fresh rosemary3 T balsamic vinegar1/4 tsp black pepper
Directions
Serves 10-12

Heat large cast iron skillet, coated with non-fat cooking spray, over medium hear

Add potatoes and seasonings and heat through

Remove skillet from heat; place in oven, uncovered at 425 F for 30 minutes or until potoatoes are tender, stirring occasionally

Add vinegar, and toss well

Sprinke wiht salkt and pepper. Roast uncovered for 6 more minutes

Serve immediately
