Crockpot vegetarian split pea soup

Ingredients
1-lb bag dry green split peas5 four-inch baby carrots, chopped1 cup chopped yellow onion2 stalks of celery, with leaves, chopped2 cloves garlic1 bay leaf1 tbsp coarsely ground black pepper3 cups vegetable broth3 cups water
Directions
Soak peas per package instructions. Drain and rinse, then place in crockpot. Add remaining vegetables, the broth, and the water. Cook on low for eight (8) hours, until peas are very soft. Serve with chopped parsley.

If you wish, run this soup through a food processor before eating. Remove the bay leaf before doing so.
