Goat Cheese Spread

Ingredients
8 sun dried tomatoes (not packed in oil!)1 1/2 Tbsp. Extra Virgin olive oil3 green onions, chopped2 cloves garlic, minced5 fresh basil leaves (may sub with 1 Tbsp. dried basil), mincedGarlic, 2 cloves (remove)5 oz. semisoft goat cheese
Directions
Stir everything together until fully incorporated and creamy. Refrigerate at least 2 hours, and serve.

Tastes best when made in the morning, marinated during the day, and served at night.

Makes 8 servings of about 1 Tbsp. each.
