Tasty Chicken Tortilla Soup

Ingredients
- 6 Flour Tortillas, (approx 10" dia)-1/2 lbs. boneless skinless chicken breasts, cut into bite-size pieces-1 can Cream of Chicken Soup, (10.75 oz)-1 cup Chunky Medium Salsa-1.5 cups Yellow Sweet Corn-3 cloves Garlic-1.5 cups Chopped raw Onions -1 cup Cheese, Kraft Mexican Style Taco Cheese-1 cup (8 fl oz) Tap Water-1.5 tsp Olive Oil
Directions
HEAT oven to 400°F. Cut 2 tortillas into strips; toss with 1/2 tsp. oil. Spread in single layer on baking sheet. Bake 10 to 12 min. or until crisp, stirring occasionally.

MEANWHILE, finely chop remaining 4 tortillas. Heat remaining oil in large saucepan on medium-high heat. Add bite sized chicken, onion, and garlic; cook and stir 5 min. Add chopped tortillas, soup, water salsa, and corn. Bring to boil; simmer on medium-low heat 15 min.

SERVE topped with cheese and baked tortilla strips.

    This is incredible! I made with whole wheat tortillas, 98% fat free soup, Pam olive oil spray instead of olive oil, no salt added corn and low fat cheddar. Tasted so good! Next time I'm adding a can of green chilies! - 4/29/09

    If you use reduced sodium/fat cream of chicken soup, whole grain tortillas, and reduced fat cheese, it lowers the sodium/fat content. Thanks for the recipe! - 2/18/09
