Roasted Vegetables with Brown Rice

1 med zucchini5 oz baby carrots1/2 sweet onion1/2 red bell pepper1 1/2 tbsp olive oil1/2 tbsp sesame oil1 tsp minced garliccoarsley ground pepper to taste1/4 c roasted salted almonds
Preheat oven to 400 degrees. Chop veggies into bite-sized pieces. Mix remaining ingredients except almonds and coat veggies well. Spread veggies on baking sheet and roast for 30 minutes, stirring after 15 minutes. Meanwhile prepare brown rice. Combine rice, veggies and almonds and serve promptly. Makes 2 1/2 servings.
