Shrimp Creole

Ingredients
2 tbsp. Butter1 medium onion, chopped1 clove garlic, minced1 medium green pepper, finely chopped1/2 cup celery, finely chopped1 can (8 oz.) tomato sauce1 (14.5 oz.) can tomatoes 1 Bay leaf1 1/2 tsp. minced fresh parsley1/8 tsp. cayenne pepper16 large cooked shrimp (thaw if frozen)
Directions
In nonstick skillet, saute celery, onion, garlic and green pepper in butter for 5 minutes or until tender. Stir in tomato sauce, tomatoes, bay leaf, parsley, salt, Old Bay seasoning and cayenne pepper. Simmer 10 minutes. Add shrimp and cook covered over medium heat 5 minutes. Serve over brown rice. Serves 4
