Basic Marinara Sauce

Ingredients
3 T. Olive Oil3 c. chopped onion (about 3 med.)1 T. sugar3 T. minced garlic (about 6 cloves)2 tsp. salt2 tsp. dried basil1 1/2 tsp. dried oregano1 tsp. dried thyme1 tsp. black pepper2 T. balsamic vinegar2 c. fat free, less sodium chicken broth3 - 28 oz. cans crushed tomatoes
Directions
Heat oil in large dutch oven over medium heat. Add onion to pan; cook 4 minutes, stirring frequently. Add sugar and next 6 ingredients, cook 1 minute, stirring constantly. Stir in vinegar, cook 30 seconds. Add broth and tomatoes, bring to a simmer. Cook over low heat for 55 minutes or until sauce thickens, stirring occasionally.

Yields about 12 cups.

Best sauces cook slowly over low heat. The final sauce should be thick, but not as thick as tomato paste. If it seems too thick, correct with a little water. Recommend freezing for up to 4 months in 1c. increments in zip top plastic bags.
