Spanish Rice

Ingredients
- 2 cups of rice- 800g of crushed or diced tomatoes- 1 tbs of tomato paste- 1kg of beef mince- 1 cup of corn- 1 cup of peas
Directions
Begin cooking the rice in a pot or rice cooker.
Brown the mince in a fry pan over a high heat.
Add diced tomatoes and tomato paste.
Add rice when cooked.
Stir in peas and corn. Don't need to defrost them before hand they will defrost with the heat of the other ingredients.
Best served with a pinch of salt and pepper. 2 tbs Mixed Herbs can be added in with the tomatoes if preferred.
Keeps well in the fridge.
