Introduction

I took the brown rice meatloaf recipe, and redid it with olives & capers & cilantro for a Spanish flavor. :) Reminds me of my grandma's cooking.

Ingredients

    1/2 cup of dried rice. (Prepared should make around 1.5 cups)
    1/2 cup oatmeal (uncooked)**
    1 pound ground turkey
    2 egg
    1 cup chopped tomatoes, drained
    dash of salt & pepper
    tsp Paprika
    2 TBS garlic
    7 green olives, chopped
    1 small onion, chopped
    1 TBS capers
    bunch of cilantro

    **To keep it Gluten free, just add 1/4 cup of brown rice or Mighty Tasty Hot Cereal, and the calories will be about the same, give or take a couple of calories.) You'll need to precook the rice.

Directions

Precook the rice.
Toss everything but the rice in a bowl and mix. When rice is cool, add, and put into a bread pan. Cook at 350 for about an hour.
Makes 8 servings.
