Thai Peanut Sauce

Ingredients
Peanut Butter, chunk style, 1.5 tbsp Lime Juice, 1 lime yields Garlic, 2 cloves Soy Sauce, 3 tbsp ginger, minced 2 tsp (optional)water to thin to tast
Directions
mix the first 5 ingredients to form a paste. Add water to the desired consistency.
This is a very tasty dressing for rice noodles, salads or atop veggie stir fry´s and is lighter than the original because it doesn´t contain peanut or sesame oil or coconut milk.

    Braggs liquid aminos, rather than soy sauce, has far less salt. Also, if you use very hot/boiling water, it will help to make the peanut butter easier to mix. - 9/7/07

    That is true. I live in Spain where Braggs is unavailable and also I don't like the taste of it. For these recipes, I much prefer a good wheat-free organic soy sauce.
