Simple Shepherds Pie

Ingredients
1 lb. 95% lean ground beef 1 cup onion, chopped Salt and pepper 1 can corn or any vegetable Mashed potatoes
Directions
Saute ground beef and onion until meat is browned. Drain off fat and season with salt and pepper to your taste. Spoon meat mixture into bottom of lightly greased 1 quart casserole spread corn over meat. Add mashed potatoes over corn. Bake at 375 degrees about 25 minutes. Place under broiler for 2 to 3 minutes if top isn't browned.

    I make this for my family at least once a month. I add beef gravy to the ground beef to give it some "juice." I also use frozen corn. I use about 3/4 lb of ground beef and get at least 6 servings when I make it. - 10/1/12

    I have been making this recipe for years. always good . I teamed it up with a tossed salad. it's good for using up leftover mashed potatoes. I also do the same thing with ground turkey. serve with can gravy on the side. Mom used to make it with canned peas. always delicious. - 5/7/15
