Valentine Cucumber Cups

2 large cucumbers, English or regular size unpeeled1/4 c. cooked fresh lobster or crab finely chopped1/4 c. celery diced finely1 tsp. fresh lime zest1 tsp. fresh lime juice3 tsp. green onion sliced thinly1 1/2 tbsp. extra-virgin olive oilSalt & Pepper to tastecelery leaves & beet hearts for garnish
Cut cucumber crosswise into 1 1/2 inch slices, then cut these slices diagonally. Scoop out centers with a melon baller making cucumber cups leaving 1/4 inch walls; salt cups lightly.
In a small bowl combine celery, lobster or crab, lime zest, lime juice, onion, olive oil, salt and pepper and fill cucumber cups; garnish with celery leaves and beet hearts and serve.
