Ingredients
3/4 cup basmati rice3 cups milk (calculated with 1%)1/2 tsp salt1 Tbsp unsalted butter8 tsp splenda (or more, to taste)1/2 cup brown sugar1 cup evaporated milk (optional)
Directions
Put all ingredients in a large pot (except the evaporated milk, if using), bring to a boil, then simmer over low heat for about an hour or until the milk has reduced by half. Taste it, to see if you want to add more sugar. If you want to make it even thicker, you can add in the evaporated milk (or you can use condensed milk, but that would add a lot of calories) or a tablespoon of butter.

You can serve it hot or cold, it's good either way.

You can add almonds or pistachios if you like a crunch.

If you want to give it a more 'exotic' flavor, add 1/2 teaspoon of ground cardamom powder. You can also add rose water if you'd like.

I looooove Kheer - this was quite tasty! I added a tea ball of Jasmine tea leaves to the rice while it was cooking and it was fantastic. - 8/24/09
