Crockpot Beef and Barley Soup

Ingredients
12 oz. boneless beef chuck, cut into 1/2" cubes4 cups water1 10/12 oz can condensed French Onion soup2 cups matchstick carrots1 cup diced celery1 8 oz. can spinach1/2 cup medium pearl barley1 tbsp. dried thyme or oregano, crused
Directions
Combine all ingredients in a slow cooker. Cover and cook on low for 7 to 8 hours or high for 3.5-4 hours. Season to taste with salt and black pepper.

I used stew meat in place of the boneless beef chuck and it was great!

Makes 4 1.5 cup servings.
