Fudgy Chocolate Chip Pancakes

Ingredients

1 cup low fat baking mix1/4 c unsweetened cocoa2 tbsp sugar1/3 cup miniature semisweet chocolate chips1 c low fat buttermilk1 large egg, beaten1/2 cup plus 1 tbsp ff hot fudge topping1 c plus 2 tbsp ff whipped topping, thawedFresh berries
Yeild 9 servings (serving size: 1 pancake, 1 tbsp fudge, 2 tbsp whipped topping)
1. Combine baking mix and next 3 ingredients in a large bowl. Stir with a whisk. Combine buttermilk and egg; add to baking mixture, stirring just until blended.
2. Pour 1/4 cup batter per pancake onto a hot nonstick griddle or large nonstick skillet ( chocolate will burn if pan is too hot) Cook 1 minute or until tops are covered with bubbles and edges look cooked. Carefully turn pancakes over.
3. Heat hot fudge topping according to instructions. Top each pancake with the fudge and whipped topping.
