Excellent replacement for potatoes or rice. Also drained and rinsed the beans. Skipped the onion and used this as the bed for grilled lemon and garlic chicken breast. Crushed red pepper gave it a nice kick. Looked beautiful plated and tasted fantastic! - 1/31/11

Made this tonight for dinner. It was really good. I also drained and rinsed the beans. How much sodium do you think that saves? - 1/25/11

This is a nutritional powerhouse, flavorful and quick and easy as well. I added italian seasoning as I was trying to copy something I ate at a health food store's lunch counter. They served theirs on toasted tuscan bread. I rinsed and drained my beans to get rid of some of the sodium. - 6/23/10
