3lbs fresh baby spinach (clean and prepped) 2tbls olive oil6 cloves fresh garlic, minced1/2 small onion 2 cans great northern beans (undrained)salt & peppercrushed red peppers (optional)
heat olive oil and add garlic and onions, cook until golden brown add fresh spinach and cook until almost wilted. Add beans (undarained) and cook until just hot. Spinach should be wilted and tender to chew. Add salt and peppers to taste.

This is a nutritional powerhouse, flavorful and quick and easy as well. I added italian seasoning as I was trying to copy something I ate at a health food store's lunch counter. They served theirs on toasted tuscan bread. I rinsed and drained my beans to get rid of some of the sodium. - 6/23/10
