Ingredients
Beef Roast (any kind will do) - 3-4 poundsCan of Beef Broth (you can use any broth you like, I prefer beef)1 packet of Italian Dressing Mix2 tablespoons of Mild Giardineira (you can use hot or none if you prefer)
Directions
Put the roast in the crock pot. Empty the dressing mix onto the roast. Put the giardineira on the roast. Pour the can of beef broth in. Cook all day on low. If you are around, you can turn the roast halfway through to make sure the top doesn't dry (even if you don't turn it, it won't be very dry). To serve, use a fork to break up the roast.

I drain a whole jar of giardineira and throw it in; otherwise my recipe is the same. It is so good! I ordered an Italian beef sandwich a few months back, and I really think this recipe tasted better than their version. - 6/16/12

I made a similiar recipe. Used beef stock, cut up onion and garlic. Left out the pepporcini juice, but did put the peppers on sandwiches and broiled with cheese.
I made it in dutch oven at 325 for 3 hours. Kids ate it and DH said it was the best thing I've made:) - 1/10/10

This is a great, easy recipe. I sometimes don't use quite as much beef broth as my hubby doesn't like it. Just use a little more water... I also toast hoagie buns w/ Provolone cheese and serve the beef and peppers on them. - 6/17/09
