Apple Cinnamon Pancakes

Ingredients
1 Cup all-purpose flour1/2 cup whole wheat flour2 tablespoons sugar1 tablespoon baking powder1 teaspoon cinnamon3 egg whites, beaten3/4 cup skim milk2 tablespoons margarine, melted1 cup unsweetened applesauce
Directions
Makes 15 3 inch pancakes

Mix together flours, sugar, baking powder and cinnamon.
Combine beaten egg whites (I just whipped my a bit in the blender - don't worry if they aren't in peaks), milk, margarine and applesauce. Mix into the dry ingredients. You can add a little more milk to thin out the batter.

Ladle with 1/4 cup sized measuring cup onto hot griddle. A non stick surface works best. When pancakes are puffy and a bit bubbly on the sides, flip and cook on the other side. The wheat flour will make this a darker pancake. Enjoy! I like to top these with sliced pears, microwaved in a bowl with a tablespoon of maple syrup.
