Ingredients
2 slices of 100% whole wheat bread2-3 slices of roast beef, lunchmeat style1 slice of muenster split in half.5 cups diced bell pepper.5 cups diced onion.5 cups diced mushroomsalt and pepper to taste
Directions
Grill veggies for about 5 minutes in non-stick skillet, until hot, but still crispy. (may need some non-stick spray)
Add sliced roast beef, any kind, but lunch meat is easiest. Heat until warm.
Transfer to a plate
Put 2 slices of bread in pan and top with cheese, toast until cheese is melty for about one minute or so, careful not to burn bread.
Top with grilled ingredients, sprinkle with salt and pepper and enjoy with a friend.
