Chopped Onion and Salsa Omelet

¼ cup egg substitute, like Egg Beaters¼ cup chopped raw onion1 tbsp diced green chiles1 tbsp La Callina mild salsa (or other tomato and bell pepper-based salsa)Pepper, 4 dashes1/16 tsp garlic powder1/16 tsp basil (optional but included in info)
1 omelet is a serving.
Because I don't like raw onions, I cooked mine first. This step is optional if you do. Place diced onions in microwave-safe bowl and fill with enough water so they will soften as they cook. Sprinkle with 2 dashes pepper and the garlic powder. Microwave 30 seconds, stir, 15 more seconds, and then drain water (microwave longer for softer onions). Then add the chiles and the salsa, mix, and microwave 15 more seconds or until warm.
Next, spray a non-stick frying pan lightly with Pam or other cooking spray. Mix basil and other 2 dashes pepper into egg substitute if desired. Cook as you would a normal omelet over low-medium heat until just about firm. This step is optional, but I like a pancake-y omelet, so I flip it over here and continue cooking for a few seconds longer until it looks like a pancake.
Transfer egg to plate and spoon half - or all - of the veggie mix onto one half and flip the other over on top. If you have veggie mixture left, spread on top (this is what I do). Sprinkle with additional pepper or garlic if desired.
Yum! At least I think so! You can use any intensity salsa you like, but I used mild. It would also taste good with diced ham / shredded ham lunchmeat, low fat/fat free cheese, or both ham and cheese for a Denver-type omelet. :)
