Simple Chicken W/ Rice

Ingredients
2 chicken legs w/ skin 1 cup brown rice long grain3 garlic cloves4 cups water2 tsp black pepper2 chicken bouillon cubes
Directions
In large pot boil together garlic( crushed) pepper and chicken with skin on for 30 minutes.
Remove chicken from water and skim fat from the top. Remove skin and bebone chicken legs. Chop into small pieces set aside.
Add the brown rice into chicken water also bouillon cubes. Let boil for 10 minutes, then cover and cook an additional 10 minutes on low,(brown rice takes longer to cook. Stir occasionally.
Add chicken back in and cook an additional 10 minutes. Keep an eyes for liquid amounts this is an almost stew not a rice dish, it's supposed to be loose. Add water if neccessary. Enjoy but watch out because anyone who comes near you will want some!!

    I had to cook the rice 10 minutes longer than the recipe called for (before I added the chicken), and it turned out to be very tasty! There was a *lot* of black pepper in this... I'd reduce that next time, and maybe add some onions or pearl onions. - 12/12/09
