Spinach, Mushroom and Artichoke Quiche

4Tbl Olive oilOne container fresh sliced mushroomsOne package frozen artichoke hearts, thawed and choppedOne cup frozen spinach, thawed.Fresh or minced garlic and onion to taste4 Whole eggs4 egg whites1 cup 1% fat cottage cheese2 light english muffins lightly toasted and quartered.
Spray bottom and sides of a standard size quiche dish or pie plate. Line bottom with english muffin pieces.
Cook mushrooms in olive oil. Add spinach, artichoke hearts, garlic and onion. Set aside.
In a large bowl beat eggs with cottage cheese.
Spoon vegetable mixture over muffin pieces (there may be some left over, save it for another recipe)
Pour egg and cheese mixture over whole thing.
Preheat oven to 350. While oven heats, muffins will soak up some of the egg mixture.
Bake approximately 40 minutes or until a knife in center comes out clean. Do not over bake.
Cut into 8 pieces.
